Peanut Butter Rice Krispie Treats

This is based on the real original Rice Krispie Treat recipe. The box claims to have the original recipe but they've changed it over the years--making it smaller and lower in fat. Bah!

The key to good Rice Krispie Treats is to buy good marshmallows. I do not like Kraft brand--they always seem to yield soggy Rice Krispie Treats. My favorite is Kidd's, but I can't buy them in my area anymore. The same with Fireside (not to be confused with Campfire). I've actually settled on the Kroger brand marshmallows and been very pleased with the results.

  • C margarine
  • 20 oz. (105) large marshmallows
  • C creamy peanut butter
  • 12 C Rice Krispie Treats
  • Extra margarine for buttering 9"x13" pan & spoon

Grease 9"13" pan with margarine, set aside. Melt margarine over low heat in very large dutch oven pan. Add marshmallows, stir to coat with margarine. Cover with lid for a couple of minutes and stir again. The key it to melt them quickly but not so quickly that you scorch them. Once marshmallows are melted, add peanut butter and stir it in completely. Add cereal and mix completely. Pour into greased pan and spread evenly using a large greased spoon. Let cool before serving.
