Touchdown Taco Dip

This is the original Pampered Chef recipe. They've changed it over the years, though, making it lower in fat (and flavor!). Accept no imitations!

  • 1 16 oz. can refried beans
  • 1 8 oz. pkg. cream cheese, softened
  • 1 C (8 oz.) sour cream
  • 2 T taco seasoning mix
  • 2-3 cloves garlic, minced or pressed
  • C cheddar cheese, grated
  • 1 med. tomato, seeded & diced
  • ripe olives, sliced
  • C thinly sliced green onions with tops
  • 2 T fresh cilantro or parsley, thinly sliced
  • Tortilla chips

Spread refried beans over bottom of Deep Dish Baker (11" round stoneware pan--you could also use a 9"x9" pan). Heat beans briefly in microwave, if necessary, for easier spreading. In medium bowl combine cream cheese, sour cream, garlic, & taco seasoning until smooth.

Spread cream cheese mixture evenly over beans. Sprinkle with grated cheese. Sprinkle with cilantro or parsley. Cover with foil and bake at 350F about 15 minutes, until hot in center. Can also be microwaved.

Top with tomato, olives & green onions (or offer toppings on the side). Serve with tortilla chips.
