Toffee Chip Cookies

This is one of those recipes that if I saw it in a book, I'd never try it because it looks insane! They're quite addicting and receive lots of compliments whenever I make them. If I recall correctly, they won Grand Champion at the Clark County (Ohio) 4-H Fair in 2002.

  • 1 C butter or margarine
  • C vegetable oil
  • 1 C sugar
  • 1 C brown sugar
  • 2 eggs
  • 1 tsp. vanilla
  • 3 C flour
  • 1 tsp. cream of tartar
  • 1 tsp. baking soda
  • 1 C quick cook oats
  • 1 tsp. salt
  • 3 C Rice Krispies
  • 1 C toffee chips
  • 1 C pecans, chopped
  • 1 C coconut

In large mixing bowl combine butter, oil and sugars. Add eggs and vanilla; mix well. Sift together flour, cream of tartar, baking soda, oats and salt--gradually add to butter/sugar mixture. Combine Rice Krispies, toffee chips, pecans and coconut. Stir into to dough. (May be necessary to do this last part by hand as bowl becomes very full and dough becomes more stiff.)

Drop by tablespoonful onto ungreased cookie sheet and bake at 350, 9-11 minutes until lightly brown around edges. Makes 4+ dozen. These cookies freeze well.
