Fruit Pizza

A friend of mine can throw together a delicious fruit pizza for dessert after supper. I, on the other hand, tend to be a little obsessive.

  • 1 Pillsbury (or homemade) sugar cookie dough crust
  • 8 oz. cream cheese, softened
  • 1/3 C sugar
  • 1 tsp. vanilla
  • strawberries (about quart)
  • kiwis (about 3)
  • grapes
  • bananas
  • mandarin oranges
  • C water
  • C orange juice
  • 2 tsp. lemon juice
  • 1 T cornstarch
  • C sugar

Spread cookie dough on greased and floured 15-inch round pan and bake 10-12 minutes at 350. Let cool completely. (I recommend using a long metal icing spatula to loosen the cookie after it's been out of the oven for about 5 minutes. It makes serving much easier.)

Mix cream cheese, sugar and vanilla well and spread on cooled crust.

In a small saucepan mix cornstarch and sugar, add water, orange juice and lemon juice and heat to a boil. Boil about one minute until clear and thickened and remove from heat. Set aside while you assemble the pizza.

Slice fruit and arrange in concentric circles on cookie (starting on the outside, working your way to the middle).

Slowly pour glaze over fruit, taking care to cover it all, and chill pizza 2 hours before serving.

Serves 16.
